One of the most unique and tasty Italian dishes I’ve had recently was fassona. It was served at a friend’s house during an outdoor birthday party. I couldn’t stop eating it…and I’ve eaten a lot of beef lately! Here are some fassonas beef recipes to try at home.
How to cook fassonas steak cooking? First of all, make sure you have the right kind of wood-grained salt. The seasoned brown type of salt works best for fassona. You can use table salt or kosher salt, just make sure it’s the same seasoning as your fassona!
How to cook fassona steak on a grill? Many people have asked me this question. The reason is that fassona really doesn’t do too well on a grill. I like to cook my beef on the coals first, then transfer them to the grill (with the fassona inside), and finish cooking them with charcoal gas. I find that cooking the fassona steak on a hot grill really develops its natural flavors, and that the fassona tends to burn a bit when it touches the hot coals.
In answer to the question on how to cook fassona: yes, you can serve fassonas on your barbeque. Just transfer it to an aluminum foil beforehand, and heat in there for a couple of minutes before serving. Some people do add a little of the seasoning mix for added flavor, but I leave that out. Fassonas tastes just fine straight off the barbeque, or with a little marinade, added to the barbeque for some added interest.

As for cooking, I start by placing the fassonas on the barbeque and turning it over, so that it cooks evenly. Sometimes I like to put the fassonas on the barbeque and then turn it, so that I get an evenly browned piece of meat. If I’ve used barbeque sauce, I take a fork and go through it, making sure that all the pieces are coated with sauce. Once that is done, I place the fassonas steak on top and let it sit for about five minutes so that all the juices and moisture are sealed in, then I cut into it and serve right away.
